Ingredients:
1/2 cup Mossop’s Liquid Field & Tawari honey
2 Tbsp butter
1 egg, beaten
1/2 cup milk
2 1/2 cups flour
3 tsp baking powder
1 Lemon (medium to large)
1 tsp Lemon Zest
Method:
- Beat honey & butter
- Add egg, lemon, lemon zest and milk, beating after each ingredient is added
- Mix dry ingredients together
- Quickly but gently mix dry mixture and honey mixture – don’t over mix!
- Bake in greased mufifn tray at 150°C for approx 25-30 minutes
